I discovered a really cool recipe the other day, did some fine tuning and now think I have a winner! Took it to work and the folks there loved it. I thought it was pretty good too.
Peanut Butter and Jam Bars
1 cup softened butter ½ cup dark brown sugar 1 cup white sugar 1/2 cup honey 2 tsp vanilla 2 eggs 2 cups peanut butter 3 cups flour 1 tsp baking powder 1 tsp salt 1-2 cups jam of any flavor
Preheat oven to 350 degrees. Grease and flour a 9x13 inch cake pan. Cream the butter, sugars, honey, peanut butter and vanilla. When fluffy, beat in the eggs. Gently fold in the flour, baking powder and salt. Evenly pat at about 2/3 of the dough into the pan, then spread with the jam, adjusting amount as you please. I like it pretty jammy so use 2 cups. Scoop sfuls of the remaining dough and scatter on top of the jam. Bake about 30 minutes or until golden brown. Allow to cool completely before cutting and serving.

not much of one for sweets but am a sucker for peanut butter anything so I am going to have to try this one ..

OMG! loaded with calories - I may have to make this... Goin' to a picnic....
I bet you could substitute chocolate chips for the jam - be similar to a Recees Peanut Butter cup

A friend of mine told me about a dessert he invented the other day. He took some chocolate cake that someone had made (in a rectangular pan), cut some squares out of it, and sliced them in half at the equator. Then he spread some vanilla ice cream in between, made sandwiches of them and put them into the freezer. Then to serve them, he poured some raspberry syrup or compote into a puddle on each plate, sat the ice cream sandwich in the middle of it, dolloped the top with whipped cream and drizzled more raspberry on top. Voila! I can imagine it would be quite a showy presentation.
Me, I don't like chocolate, but I could see doing the same with gingerbread cake, and maybe lemon sauce on top...
